Jerk Chicken Rasta Pasta

One of my very good friends wanted to treat me to a birthday dinner last month and I knew what I wanted because I was craving this dish for a long time. I wanted Rasta Pasta, so the plan was, she will come over and we will order, watch a movie and hang out… but (insert suspenseful music) the place where I used to get it from didn’t have any delivery people available through Ubereats, that was the first time I saw that message. I was so disappointed but wanted my Rasta Pasta so we searched for another restaurant that made it and found one that wasn’t too far from my place. Long story short… we ordered, it was horrible and I was further disappointed, I mean at least the BBQ chicken that came with it was good and she brought Chocolate Cake… So from that experience, I developed the burning desire to learn how to make it myself and here we are.

For my first try at making Jerk Chicken; oh excuse me, let me correct myself “my version of Jerk Chicken”, don’t come for me guys. I must say I am very proud of how it turned out. I will have to do a video only for Jerk Chicken soon. I used mild Walkerwoods Jerk Seasoning and my food still came out spicy, might be because of the second addition of the jerk seasoning. Mind you it was only considered spicy to me, everyone else who had some said it wasn’t spicy at all… Go Figure “shrugs.”

I cooked my Chicken in my fancy new Lodge cast iron grill pan and I just want to let you know that you can cook it in whatever you have; the important thing is that it gets cooked! I also made this using chicken thighs which was good but cons on using chicken thighs is:

  1. You have a lot of fat to remove
  2. It’s not much to look at visually (if you care about presentation that is). If you don’t care then use whichever part of the chicken you like.

Ingredients

Adjust Servings
1 lbs chicken breast (2 breast)
1 bag (16oz) penne pasta
½ cup shredded cheese
1 cup heavy cream or evaporated milk
½ -1 cup Coconut milk
1 heaping cup of Bell peppers (red, green and yellow), sliced
¼ cup onions, sliced
1 scallion (green onion), sliced, save greens for garnish
1-2 large garlic cloves, minced
2 thyme sprigs
2 tablespoons unsalted butter
1 tablespoons oil
1 tablespoon epis (green seasoning)
2 tablespoons Jerk seasoning
1 teaspoon salt
½ black pepper
1 teaspoon smoked paprika
1 teaspoon onion powder
1 teaspoon garlic powder
teaspoon cayenne pepper
½ tsp liquid smoke (optional)

Directions

1.

Clean Chicken breast

Clean Chicken breast by removing any visible fat and rinsing with vinegar. Rinse chicken under cold water, drain then marinate it by adding epis, 2 tablespoons jerk seasoning, salt, pepper, smoked paprika, onion powder, garlic powder, cayenne pepper, liquid smoke, and mix

Cook Pasta

Cook Pasta according to package instructions. Once cooked, drain and rinse under cold water to stop cooking the pasta. Set aside.

Cook Chicken

In a medium-sized pan on a medium to high flame cook chicken breast on each side for approximately 10 minutes. Chicken cook time is from 20-25 minutes.

Cook Vegetables

To a medium size pot, on low to medium heat add butter, onions, garlic, thyme, scallion, bell peppers and sauté until vegetables are softened. Add remaining jerk seasoning and mix well.

Slice chicken breast, reserve one, add the other into the pot with veggies, and mix for about 2 minutes.

Add heavy cream, coconut milk, cheese and mix well until the cheese is melted. Season to taste with salt, garlic powder, onion powder, smoked paprika and add more coconut milk if you want more sauce.

Serve

Add pasta and mix well, plate pasta and add the remaining sliced chicken breast on top (if you so desire). Serve with garlic bread, enjoy!
