Spageti Djon Djon ak Kribich (Linguine w/black mushrooms and shrimp)

So guys, this recipe just might be my new favorite!! Have I said this before? Probably *shrugs* but I really mean it this time. It will probably become your new favorite if you try it. I have to note that this isn’t a traditional Haitian dish, at least I don’t think it is because I didn’t grow up eating it; my mom never made this, Diri Djon Djon yes but never with pasta. I actually heard about this for the first time from Nadege Fleurimond back in 2015 on her YouTube cooking show “Dishin’ it”. Nevertheless I am so happy that I tried it, I didn’t make it the same way she did, I put my own twist to it and it came out so good and it’s simpler than you think.

The ingredients are fairly simple, I made mine with shrimp and it was awesome. I haven’t tried it with chicken yet but I’m sure it would taste good; maybe not as good as the schrimps but yeah, you can make it with whatever your heart desires or plain, it’s easy to make this vegan. I seasoned the 

schrimps with my all purpose seasoning blend, guys I gotta promote my business lol. Now if you don’t have my seasoning (you should though LOL) you can substitute it with this:

  • ½ teaspoon garlic powder 
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ⅛ teaspoon cayenne pepper 
  • ¼ teaspoon black pepper
  • and add the same amount of salt listed in the recipe below

I toasted the Djon Djon before adding the water because my aunt (shout out to matant Adline & my grandma) who said toasting it intensifies the taste and color of your final product. Did I find that to be true iono 🤷🏾‍♀️ but my final product was still good and it didn’t hurt to do so I would do it again.

I used linguine pasta, never you mind that the recipe is titled Spageti ak Djon djon… To me it sounds better than Linguine ak Djon djon and to be honest us Haitians call any long pasta noodle spaghetti… it is what it is 🤷🏾‍♀️

I served this with pan seared salmon seasoned with my Li Bon All Purpose Seasoning… The recipe for that is coming soon so stay tuned, it’s a good one!!

Ingredients for Linguine:
1 pack (16oz) of linguine
1 ⅓ cup dried Djon djon, (sorted cleaned)
2 tablespoons epis
3 garlic cloves, minced
½ cup bell peppers, sliced
¼ cup onions, sliced
1 teaspoon sea salt (for pasta liquid)
⅛ teaspoon clove powder
1 Bouillon cube
¼ teaspoon dried thyme
1 hot pepper
1 tablespoon cooking margarine
Ingredients for shrimp:
.5lbs-1lbs shrimp, deveined
2 teaspoons all purpose seasoning
¼ teaspoon sea salt for shrimp
¼ cup olive oil

Directions

1.

Boil djon djon in 7 cups of water, drain, add two more cups of water and set liquid aside.
Mark as complete

Season shrimp with all purpose seasoning, mix well and set aside.
Mark as complete

Bring 7 cups of Djon Djon liquid to a boil, add 1 teaspoon salt, linguine and boil for about 7-10 minutes. Drain pasta, reserve about 2 cups of the liquid.

On low to medium heat, in a medium sized pot add half of the oil and allow it to heat up. Add shrimp, cook for about 2 minutes then turn over and cook the other side for another 2 minutes. Remove shrimp from pot, add remaining oil, epis, onions, bell peppers, garlic… cook until veggies soften then add bouillon cube along with 1 cup of the reserved djon djon liquid, hot pepper, clove powder, dried thyme and mix.

Add linguine, cooking margarine and mix well, add more reserved liquid as needed. Serve with boiled eggs or salmon or garlic bread. Enjoy!!

Notes

Reserve at least 2 cups of the djon djon/pasta liquid. It makes your pasta come out even darker.
