Makawoni Au Graten ak Lambi (Haitian Style Baked Macaroni and Cheese with Conch)

So let me start this post off by saying this isn’t a traditional Haitian dish… in my mind I made this up… I was watching a video on YouTube and the video that played automatically after it was a recipe on how to make Lobster Mac and cheese. It looked delicious and I said to myself “self, you can flip it and turn it into Haitian style” I didn’t actually say self guys, I’m not crazy now ;-p I’m not a big Lobster eater, it’s just not something I eat often so Lambi (conch) came to mind and who doesn’t love Lambi? So these are the ingredients you will need to make the lambi (conch). To begin you will have to clean it of course so below I posted brief instructions on how to do that.

 

Brief instructions on how to clean Lambi (Conch):

Ingredients:

  • ½ lbs Conch
  • 1 lemon, half juice reserved

Tools:

  • Malet
  • Sharp knife and kitchen shears
  • Plastic wrap
  • Cutting board

Instructions:

  1. Remove pink and black parts and discard. Slice thick pieces into two.
  2. Place pieces between plastic wrap and tenderize conch by pounding it with the malet being sure not to over-tenderize.
  3. Cut into small bite-size pieces then rub each piece with lemon halves. Rinse the conch with cold water then discard water.
This macaroni came out so so so good, I can’t recommend you try this enough… PLEASE TRY THIS… You won’t regret it!!!
