Easy Oven Baked Chicken

Soooooo, only cooking chicken in the oven is fairly new to me, I’ve been doing this for about 3 years now… I’m used to cooking it on the stovetop first then putting it in the oven (which I still do most of the time). Although it’s fairly new I do like it, it’s definitely easier.

The ingredients were super simple, oil, my Li Bon! All purpose seasoning, salt, dried parsley, thyme and cilantro. I mention in the video that you can use another all purpose seasoning if you don’t have mine but you may have to reduce the amount of salt from my recipe because the other all purpose seasoning may contain more sodium than mine. I used thighs and legs for this dish. Guys please make sure you are cleaning your chicken cause I took some nasty stuff off of this chicken… refer to the video below so you can see. I cleaned my chicken with lime and vinegar and I removed some of the fat but left most of it on and I scraped my paring knife across the skin to remove feathers and some yellow substance (not sure what to call it) off of it.

I served this with diri ak joumou and sweet plantains and it was delicious, I ended up making a sauce with onions and bell peppers from the drippings of the chicken but you really could just use the drippings as is, I’m just a little extra sometimes LOL.  Whatever you decide to do, you will enjoy this recipe, comment below and let me know if you do.

Ingredients

Adjust Servings
2lbs of chicken drums and thighs, cleaned & skin on
1 ½ teaspoon sea salt
2 teaspoons all purpose seasoning
½ teaspoon dried thyme
½ teaspoon dried parsley
¼ teaspoon dried cilantro
⅛ cup oil

Directions

Preheat oven to 400℉ degrees
Mark as complete

Mix salt, all purpose seasoning, thyme, parsley, cilantro together, pour half of the oil over the chicken followed by the dried spices. Combine well making sure all the chicken is evenly coated with oil and seasonings.

Bake the chicken for 20 minutes, then pour the pan drippings into a bowl. Turn chicken over to the other side, baste it with the drippings and let it cook for another 20 minutes. While chicken is skin side up and on the middle rack turn the broiler on and allow it to broil for 5-10 minutes (keep an eye on it so it doesn’t burn).

Serve with your choice of rice or mashed potatoes, enjoy!

Notes

Clean chicken with lime and vinegar, trim excess skin and fat but leave a lot of fat on and remove any feathers.
Marinate the chicken overnight if you can.
Make sure you rub the seasoning in under the skin too, not just on top.
You can pour the pan drippings over your chicken and whatever rice you’re serving it with.
