8 slices of stale French Brioche Bread | |
3 eggs eggs | |
⅓ cup + 2 tablespoons coconut milk | |
⅛ teaspoon nutmeg | |
⅛ teaspoon cinnamon | |
½teaspoon vanilla extract | |
½ teaspoon coconut extract | |
¾ cup unsweetened finely shredded coconut flakes | |
4 tablespoons salted butter (to fry french toast) |
Directions
1.
In a medium sized bowl beat eggs together then add coconut milk, nutmeg, cinnamon, vanilla, coconut extract and mix well.

Pour batter into a rectangular dish, place bread into batter making sure to cover all sides of bread with batter. Allow bread to soak up batter for about a minute on each side.

In another rectangular dish add coconut flakes, coat each slice of batter dipped bread with coconut flakes.

4.
Fry french toast adding 1 tablespoon per two french toast to frying pan for 1-2 minutes on each side.

5.
Serve with warm pineapple chunks and maple syrup.
