Coconut French Toast

Hey guys, how are you today on this fine day (whenever you are reading this)? I’m rolling something different out on the blog, I’ve been thinking about doing this for years and not doing this just didn’t make sense. I will now be posting other recipes aside from Haitian Food starting with today’s recipe Coconut French Toast (if you don’t like coconut, what’s wrong with you? I kid, I kid, I’m not kidding LOL seriously, coconut is life). Anyhow… I made this for the first time back in 2015 for a friend’s birthday and it was a hit!

 

The ingredients are your typical French toast ingredients with the added goodness of coconut extract and coconut flakes. In the picture above I have 5 slices of bread but his recipe actually makes 8 frenchy french toasts. I ended up making 7 in the video, I didn’t have that last slice cause I made a peanut butter sandwich with it (yes with one slice sliced into two, so good) but that’s besides the point LOL.

Make sure your bread is stale before making this as soft bread can fall apart when dipped in the batter. I can hear you saying how do I make the bread stale? That’s easy, just decide the day before that you want to make this recipe and take your bread out of the package and allow it to sit on a plate freely on your counter, the air hitting it will make it stale over time.

Ingredients

Adjust Servings
8 slices of stale French Brioche Bread
3 eggs eggs
⅓ cup + 2 tablespoons coconut milk
teaspoon nutmeg
teaspoon cinnamon
½teaspoon vanilla extract
½ teaspoon coconut extract
¾ cup unsweetened finely shredded coconut flakes
4 tablespoons salted butter (to fry french toast)

Directions

1.

In a medium sized bowl beat eggs together then add coconut milk, nutmeg, cinnamon, vanilla, coconut extract and mix well.
Mark as complete
2.

Pour batter into a rectangular dish, place bread into batter making sure to cover all sides of bread with batter. Allow bread to soak up batter for about a minute on each side.

3.

In another rectangular dish add coconut flakes, coat each slice of batter dipped bread with coconut flakes.
Mark as complete
4.

Fry french toast adding 1 tablespoon per two french toast to frying pan for 1-2 minutes on each side.
Mark as complete
5.

Serve with warm pineapple chunks and maple syrup.
Mark as complete
