1 lbs Shrimp, deveined and cleaned | |
2 tablespoons Epis | |
2 tablespoons oil | |
1 tablespoon cooking margarine | |
1 ½ tablespoon tomato paste | |
2 cloves of garlic, minced | |
½ cup onions, slice | |
½ cup bell peppers, sliced | |
½ teaspoon onion powder | |
½ teaspoon garlic powder | |
½ teaspoon old bay seasoning | |
Half of ⅛ teaspoon clove powder | |
Half of ⅛ teaspoon cayenne pepper | |
¼ teaspoon salt | |
⅛ teaspoon dried thyme |
Directions
1.
Make the barbecue sauce (or substitute 3/4 to 1 cup bottled sauce):
In a small bowl marinate your shrimp by pouring epis and dried spices on it, set aside.

Cook the chicken (or substitute 2 cups shredded cooked chicken):
In a skillet on low to medium heat add oil, once hot add marinated shrimp and cook on each side for about 2 minutes then remove.

Mix the chicken with the barbecue sauce:
To the same skillet add cooking margarine followed by the tomato paste and fry the tomato paste for about a minute or so then add ½-1 cup of water, garlic and mix well.

Let sauce come to a simmer then add shrimp back to the skillet followed by onions and peppers. Cover and let simmer for 10 minutes, serve with rice or fried plantains. Enjoy!
